All the available colors are shown on the top of the screen. To color in a square, just tap on a color and then on a square with that color's number inside.

And don't worry if you don't have time to finish the drawing: Pixel Art lets you leave any of the pages in progress and finish it later. Not only that, but you can also clear the image and start over, or color it again after you've finished, as many times as you want. Once you've finished, you can save your artwork and share it with your friends, and you'll earn some coins that you can use to unlock new drawings.
